zucchini, spiralized into noodles

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté until soft and translucent, about 3-4 minutes.
Add the diced bell pepper to the pot and sauté for another 2-3 minutes until slightly softened.
Sprinkle in the cumin, paprika, chili powder, salt, and pepper to the mixture, stirring to coat the vegetables evenly.
Add the diced chicken breast to the pot, cooking until it turns white on the outside (about 5 minutes).
Pour in the chicken broth, diced tomatoes, and green chilies. Bring the mixture to a boil, then reduce the heat and simmer for about 20-25 minutes.
In the last 5 minutes of cooking, add the spiralized zucchini to the soup, allowing it to soften but still retain some crunch.
Taste and adjust the seasoning if necessary.
Serve the soup hot, garnished with fresh cilantro, avocado slices, and a wedge of lime on the side.
Notes
