Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the chopped onion and garlic, sautéing for about 2 minutes until fragrant and the onion becomes translucent.
Stir in the peas and carrots mix, continuing to cook for another 2-3 minutes until the vegetables are heated through.
Push the vegetables to one side of the skillet and add the cooked rice to the other side.
Pour the soy sauce, oyster sauce, sesame oil, and curry powder over the rice. Stir everything together to combine, breaking up any clumps of rice.
Add the pineapple chunks and chopped green onions, folding them gently into the rice mixture.
Stir-fry everything together for an additional 3-4 minutes until the rice is heated through and begins to crisp slightly on the bottom.
Season with salt and pepper to taste, adjusting as needed.
Remove from heat and let it sit for a minute to allow flavors to develop.
Garnish with fresh cilantro before serving if desired.
Notes
Use day-old rice for best texture. Substitute oyster sauce with mushroom sauce for a vegetarian option.
