2 cups frozen shredded hash browns (thawed)

1/4 cup unsalted butter, melted

1/2 teaspoon garlic powder

Salt and pepper, to taste

6 large eggs

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup green onions, sliced

1/2 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a mixing bowl, combine the thawed hash browns, melted butter, garlic powder, salt, and pepper. Mix well until the hash browns are evenly coated.

      Press the hash brown mixture firmly into the bottom and up the sides of a greased 9-inch pie dish to form a crust. Bake in the preheated oven for about 25 minutes, or until the crust is golden and crispy.

        While the crust bakes, in another bowl, whisk together the eggs and heavy cream until fully combined. Season with salt, pepper, and thyme.

          Once the hash brown crust is ready, remove it from the oven and reduce the temperature to 350°F (175°C).

            Sprinkle the shredded cheddar cheese over the baked hash brown crust, followed by the chopped spinach and halved cherry tomatoes.

              Pour the egg mixture evenly over the vegetables and cheese, gently pressing down any floating ingredients to ensure they sink into the mixture.

                Bake the quiche in the oven for 30-35 minutes, or until the filling is set and the top is slightly puffed and golden.

                  Let the quiche cool for about 10 minutes before slicing. Top with sliced green onions before serving.
