In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook, stirring occasionally, for about 10-15 minutes, or until golden brown and tender.
Push the potatoes to one side of the skillet. In the empty side, add the sausage meat. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
Add the chopped onion, red bell pepper, and minced garlic to the skillet. Stir everything together and cook for an additional 5 minutes until the vegetables are softened.
Sprinkle the dried oregano, smoked paprika, salt, and pepper over the mixture. Stir well to combine and let everything cook together for another 2-3 minutes to meld the flavors.
Remove from heat and garnish with fresh chopped parsley before serving.

Serve the skillet directly from the pan, garnished with additional parsley for a fresh touch. Pair with crusty bread for dipping!
