12 oz fettuccine pasta

1 lb Italian sausage (mild or spicy, based on preference), casings removed

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach

Salt and black pepper to taste

Fresh basil leaves for garnish

Crushed red pepper flakes (optional, for heat)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Cook the Sausage: In a large skillet over medium heat, add the olive oil. Add the Italian sausage, breaking it up with a wooden spoon, and cook until it’s browned and cooked through (about 5-7 minutes).

      Sauté Garlic: Add the minced garlic to the pan with the sausage and sauté for about 1 minute until fragrant, making sure not to burn it.

        Make the Alfredo Sauce: Reduce the heat to low. Add the heavy cream to the sausage and garlic mixture, stirring to combine. Gradually mix in the Parmesan cheese until melted and smooth. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.

          Combine Ingredients: Add the drained fettuccine and baby spinach to the skillet. Toss until the pasta is well coated with the Alfredo sauce and the spinach has wilted (about 2-3 minutes).

            Season: Season with salt, black pepper, and crushed red pepper flakes if using, to taste.

              Serve: Plate the pasta and garnish each serving with fresh basil leaves and extra Parmesan cheese if desired.
