Instructions
Prepare the dough: In a large mixing bowl, whisk together the flour, salt, and sugar. Add the cubed butter to the bowl and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
Add water: Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. It should be slightly sticky but manageable. Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Prepare the filling: In a large bowl, combine the sliced apples, lemon juice, cinnamon, nutmeg, and brown sugar. Toss until the apples are well coated and set aside to let the flavors meld.
