Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, chopped pecans, coconut flakes, chia seeds, cinnamon, and salt. Mix well.
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated.
If desired, fold in the dried cranberries or raisins for an extra touch of sweetness.
Spread the granola mixture evenly on the prepared baking sheet, pressing it down gently to form clusters.
Bake in the preheated oven for 15-20 minutes, or until golden brown, stirring halfway through to ensure even baking.
Remove from the oven and let it cool completely on the baking sheet; it will harden as it cools.
Once cooled, break it into clusters and store in an airtight container.
