Instructions
In a large mixing bowl, combine the diced mango, black beans, red bell pepper, red onion, corn, and minced jalapeño if using.
Add the chopped cilantro to the bowl, mixing well to distribute the ingredients evenly.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper to create a dressing.
Drizzle the dressing over the salad mixture and gently toss until everything is well coated.
Taste and adjust seasoning with additional salt, pepper, or lime juice, if necessary.
Let the salad sit for at least 10 minutes to allow the flavors to meld.
Notes
Serve in chilled bowls or on a platter. Garnish with extra cilantro leaves and lime wedges.
