Instructions
Prepare the Dip: In a small bowl, combine peanut butter, soy sauce, sesame oil, lime juice, and salt. Mix until smooth, adding a little water if needed for a dipping sauce consistency. Set aside.
Soak Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds or until soft. Remove and lay it flat on a clean surface.
Assemble the Rolls: In the center of the softened rice paper, place a few slices of mango, avocado, cucumber, and carrot. Add a few mint and cilantro leaves on top.
Roll the Summer Rolls: Fold the sides of the rice paper over the filling, then roll from the bottom to the top, tucking in the filling as you go. Repeat this process with the remaining wrappers and ingredients.
Serve: Arrange the summer rolls on a serving platter. Cut them in half diagonally for better presentation. Serve with the peanut dipping sauce on the side.
