Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, honey, dried thyme, paprika, salt, and pepper to create a marinade.
Add the chicken drumsticks to the bowl and toss well to coat them evenly in the marinade. Allow them to marinate for at least 30 minutes, or if time permits, up to 2 hours in the refrigerator for enhanced flavor.
After marinating, arrange the drumsticks in a single layer on the prepared baking sheet, making sure they are not overcrowded.
Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden, flipping the drumsticks halfway through the cooking process.
Use a meat thermometer to ensure the internal temperature reaches at least 165°F (74°C).
Once done, remove from the oven and let them rest for 5 minutes. Garnish with freshly chopped parsley before serving.
