Instructions
In a mixing bowl, combine the rolled oats, chia seeds, and a pinch of salt. Mix well to ensure the chia seeds are evenly distributed.
In a separate bowl, whisk together the almond milk, Greek yogurt, honey (or maple syrup), lemon zest, and lemon juice until smooth and well combined.
Gradually pour the wet mixture over the oats, stirring gently to combine. Make sure all oats are coated in the liquid.
Fold in the fresh blueberries, saving a handful for topping later.
Divide the oat mixture evenly into jars or airtight containers. Seal them tightly and refrigerate overnight (or for at least 4 hours).
In the morning, give the oats a good stir. If the mixture is too thick, add a splash more of almond milk to reach your desired consistency.
Top with additional fresh blueberries and a sprinkle of lemon zest before serving.
Notes
Serve in clear glass jars to showcase the beautiful layers, and garnish with a sprig of mint for an added touch of freshness.
