2mediumsweet potatoes, peeled and diced

1tablespoonsoy sauce (or tamari for gluten-free)
1tablespoonolive oil
1teaspoonsmoked paprika
1teaspoondried thyme

for garnishfresh parsley, chopped
Instructions
Heat a large skillet over medium heat and add the olive oil.
Once the oil is hot, add the diced sweet potatoes and sauté for about 5-7 minutes, stirring occasionally, until they start to soften.
Add the chopped onion and red bell pepper to the skillet. Continue to cook for another 5 minutes until the onions become translucent.
Push the vegetables to one side of the skillet and add the sliced chicken sausage to the other side. Cook until the sausage is browned, about 4-5 minutes.
Stir in the minced garlic, smoked paprika, and dried thyme, mixing everything together for an additional minute until fragrant.
In a small bowl, combine the honey and soy sauce. Pour this mixture over the sausage and vegetables, stirring well to coat everything evenly.
Season with salt and pepper to taste and allow the skillet to cook for another 3-4 minutes until everything is heated through and caramelized.
Remove from heat, garnish with chopped fresh parsley, and serve immediately.
