Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup buttermilk (or milk with a splash of vinegar)

2 tablespoons fresh herbs (like rosemary or thyme), finely chopped

1 tablespoon honey (optional, for a hint of sweetness)

Extra flour for dusting

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk to incorporate well.

Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs.

Stir in the chopped herbs and honey (if using), making sure they are evenly distributed.

Pour in the buttermilk and mix until just combined. Be careful not to over-mix; the dough should be slightly sticky but manageable.

Dust a clean surface with flour and turn the dough out onto it. Gently knead the dough a few times until it comes together.

Roll or pat the dough to about 1-inch thickness. Use a biscuit cutter to cut out the biscuits and place them on the prepared baking sheet.

Make sure the biscuits are touching for softer sides, or space them out for crisper edges.

Bake in the preheated oven for 12-15 minutes, or until golden on top and a toothpick comes out clean.

Let them cool slightly before serving.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 10-12 biscuits

                        - Presentation Tips: Serve warm, drizzled with a little olive oil or melted butter on top, and garnish with extra fresh herb sprigs for an appealing presentation.
