black beans, drained and rinsed

diced tomatoes with green chilies

corn kernels (fresh or frozen)

beef broth

Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
Add the diced onion and minced garlic to the skillet, sautéing until the onion is translucent.
Stir in the black beans, diced tomatoes (with their juice), corn, uncooked elbow macaroni, beef broth, chili powder, cumin, salt, and pepper.
Bring the mixture to a gentle simmer, then remove from heat and transfer everything to a greased 9x13 inch casserole dish.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and sprinkle shredded cheddar cheese over the top.
Return the casserole to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Once done, remove from the oven and let it sit for a few minutes before serving.
Garnish with chopped fresh parsley just before serving.
