1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup corn, fresh or canned (drained)

1 ripe avocado, diced

1/2 red onion, finely chopped

1 small jalapeño, deseeded and minced

1/4 cup cilantro, chopped

Juice of 1 lime

2 cups cooked quinoa (or brown rice)

Optional: Sliced lime and extra cilantro for garnish

Prepare the Shrimp: In a bowl, combine the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Mix well and let it marinate for about 15-20 minutes while you prepare the salsa.
