1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1 cup Kalamata olives, pitted

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1 lemon (for juice and zest)

Tzatziki sauce (store-bought or homemade)

Prepare the Chicken: In a bowl, combine the olive oil, dried oregano, garlic powder, salt, and pepper. Add the chicken thighs and toss to coat evenly. Marinate for at least 30 minutes or overnight for best flavor.

    Cook the Chicken: Preheat your grill or skillet over medium-high heat. Cook the chicken thighs for about 6-7 minutes on each side, or until they are golden and cooked through (internal temperature should reach 165°F/75°C).
