Instructions
Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
In a large bowl, toss the thinly sliced zucchini with olive oil, ensuring each slice is well coated.
Add garlic powder, onion powder, Italian seasoning, salt, and pepper to the bowl, and mix until the zucchini is evenly seasoned.
Lay the seasoned zucchini slices in a single layer on the prepared baking sheet. Avoid overlapping for even cooking.
Sprinkle grated Parmesan cheese generously over the zucchini slices.
Bake in the preheated oven for about 2 hours, or until the chips are golden brown and crispy. Check occasionally to prevent burning.
Once done, remove from the oven and let cool slightly on the baking sheet. They will crisp up more as they cool.
Serve immediately or store in an airtight container for later snacking. Garnish with chopped fresh parsley before serving.
