Instructions
Start by washing the russet potatoes thoroughly under cold water. Pat them dry with a kitchen towel. Cut each potato in half lengthwise, then cut each half into wedges about 1-inch thick.
In a large bowl, combine the potato wedges with olive oil, minced garlic, garlic powder, onion powder, smoked paprika, Italian herbs, salt, and pepper. Toss well to ensure all wedges are evenly coated.
Add the grated Parmesan cheese to the bowl and toss again until the cheese adheres to the wedges.
Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Place the potato wedges in a single layer in the air fryer basket. You may need to cook them in batches if your air fryer is small.
Cook the wedges for 15-18 minutes, shaking the basket halfway through to ensure even cooking and crispiness. Cook until golden and crisp to your liking.
Once done, remove the wedges from the air fryer and let them cool slightly.
Serve the garlic Parmesan potato wedges warm, garnished with chopped parsley for a fresh touch.
