In a small bowl, mix together minced garlic, rosemary, thyme, parsley, lemon zest, olive oil, salt, and pepper to create a flavorful herb marinade.
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for more intense flavor).
Preheat your oven to 400°F (200°C).
Once marinated, remove the chicken from the fridge. Heat a large oven-safe skillet over medium-high heat and add a splash of olive oil.
Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 75°C).
Remove the skillet from the oven and let the chicken rest for 5 minutes before slicing.
Serve the garlic herb chicken warm, garnished with fresh herbs and lemon wedges if desired.
Notes
For more intense flavor, marinate the chicken for up to 4 hours.
