Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium heat. Once hot, add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Reduce heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese and Italian seasoning. Mix well until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
Return the cooked chicken breasts to the skillet, spooning the sauce over them to coat well. Allow them to simmer in the sauce for about 2-3 minutes to absorb flavors.
Serve the chicken hot, drizzled with extra sauce from the skillet, and garnish with chopped parsley.
