In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy (about 5 minutes).
Add the eggs one at a time, mixing well after each addition. Then, blend in the vanilla extract and lemon zest if using.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture, alternating with the whole milk. Start and end with the flour mixture, mixing until just combined. Do not overmix.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 30-35 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.
Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Before serving, dust the cooled cake with powdered sugar for an elegant finish.
