2 lbs boneless, skinless chicken thighs

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes with green chilies

1/2 cup salsa (your preferred spice level)

1 red bell pepper, chopped

1 yellow onion, diced

2 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: Place the boneless chicken thighs at the bottom of the crockpot. Season generously with salt, pepper, ground cumin, chili powder, and smoked paprika.

    Layer the Vegetables: Add the chopped red bell pepper, diced onion, and minced garlic on top of the chicken.

      Add the Canned Ingredients: Pour in the black beans, corn, and diced tomatoes with green chilies. Finally, add the salsa over the top to seal in the flavors.

        Mix Gently: Without disturbing the chicken too much, gently mix the top ingredients to distribute everything evenly across the crockpot.

          Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
