kidney beans, drained and rinsed

diced tomatoes with juice

Worcestershire sauce

Instructions
In a skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until the beef is fully cooked. Drain excess fat.
Transfer the cooked beef mixture to the crock pot.
Add the sliced carrots, diced potatoes, kidney beans, and diced tomatoes (with their juice) to the crock pot.
Pour in the vegetable broth and add the Worcestershire sauce, dried thyme, and cumin. Stir to combine all ingredients together.
Season with salt and pepper to taste.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
Before serving, taste and adjust seasonings as needed.
Ladle the stew into bowls and garnish with freshly chopped parsley.
