In a shallow bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well until combined.
In another bowl, whisk the eggs until well beaten.
Dip each zucchini fry into the egg mixture, allowing any excess to drip off, then roll it in the breadcrumb mixture, pressing gently to adhere the coating.
Place the coated zucchini fries on the prepared baking sheet in a single layer.
Lightly spray the tops of the fries with olive oil spray to help them crisp up in the oven.
Bake for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.
Once cooked, remove from the oven and allow to cool slightly before serving.
