1 pound boneless, skinless chicken breasts, cut into bite-sized chunks

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon cayenne pepper (adjust based on spice preference)

Cooking spray or vegetable oil for frying

Instructions
 

Preheat your oven to 400°F (200°C) if you want to bake the nuggets after frying for extra crispiness.

    In a large bowl, season the flour with salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.

      In another bowl, beat the eggs until smooth.

        In a third bowl, place the panko breadcrumbs. For extra flavor, you can mix in a pinch of salt and a little garlic powder to the breadcrumbs.

          Take each piece of chicken and first coat it in the seasoned flour mixture, shaking off any excess.

            Dip the floured chicken in the beaten eggs, ensuring it's fully coated.

              Transfer the chicken to the breadcrumb bowl, pressing down gently so the breadcrumbs stick well to the chicken.

                Arrange the coated chicken nuggets on a plate or baking tray, and repeat with the rest of the chicken pieces.

                  Heat a skillet over medium heat and add enough oil to cover the bottom of the pan. Once hot, carefully place the nuggets in the skillet without overcrowding. Fry each side for about 3-4 minutes until golden brown.

                    Once the nuggets are crispy and cooked through, transfer them to a paper towel-lined plate to drain excess oil.

                      If you like them extra crispy, place the fried nuggets on a baking sheet and bake them in the preheated oven for another 5-7 minutes.
