Dip each zucchini fry first into the egg, ensuring it's fully coated, then roll it in the breadcrumb mixture to coat evenly. Repeat with all zucchini pieces.
Lightly spray the air fryer basket with cooking spray to prevent sticking.
Place the coated zucchini fries in a single layer in the air fryer basket, ensuring they don’t overlap. You may need to do this in batches.
Air fry for 10-12 minutes, or until the fries are golden brown and crispy, flipping halfway through the cooking time.
Once done, remove from the air fryer and let cool for a few minutes before serving.
