In a mixing bowl, combine the chopped pecans, brown sugar, granulated sugar, cinnamon, melted butter, vanilla extract, and a pinch of salt. Mix well until the ingredients are fully integrated, forming a thick mixture.
Unroll the crescent roll dough onto a flat surface. Separate the triangles as indicated on the packaging.
Place a small spoonful of the pecan mixture at the wide end of each crescent triangle. Be careful not to overfill, as this will make rolling difficult.
Starting from the wide end, roll the triangle up towards the pointed end, encasing the filling inside. Pinch the edges to secure the filling.
Place each rolled crescent on the prepared baking sheet, spacing them evenly to allow for puffing during baking.
Bake in the preheated oven for 12-15 minutes, or until golden brown. Keep an eye on them to prevent burning.
Once baked, allow the crescent rolls to cool slightly on the baking sheet before transferring them to a wire rack. Enjoy them warm!
