ripe mangoes, peeled and diced

coconut milk

Greek yogurt

honey or maple syrup

shredded coconut (optional)
Instructions
In a blender, combine the diced mangoes, coconut milk, Greek yogurt, honey (or maple syrup), vanilla extract, and salt.
Blend on high until the mixture is smooth and creamy, scraping down the sides if necessary.
Taste the mixture and adjust sweetness if needed by adding more honey or maple syrup.
If you'd like some texture, fold in the shredded coconut gently into the blended mixture.
Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
Insert the popsicle sticks and freeze for at least 4-6 hours, or until fully solid.
To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull the popsicles out.
