2 cups of chicken breast, diced

1 cup of long-grain rice

4 cups of chicken broth

1 cup of heavy cream

1 cup of broccoli florets (fresh or frozen)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

    Add the diced chicken to the pot, season with salt, pepper, thyme, and paprika, and cook until the chicken is browned on all sides (about 5-6 minutes).

      Stir in the rice, allowing it to toast slightly for a minute, then pour in the chicken broth and bring to a boil.

        Reduce heat to low, cover, and let it simmer for about 15 minutes, or until the rice is fully cooked and has absorbed most of the liquid.

          Mix in the broccoli florets and heavy cream, stirring gently to combine. Cover the pot again and cook for an additional 5 minutes until the broccoli is tender and the mixture is creamy.

            Taste and adjust seasoning if necessary, then remove from heat.

              Serve hot, garnished with fresh parsley on top.
