Instructions
In a mixing bowl, combine the softened goat cheese, honey, chopped rosemary, salt, and black pepper. Mix until smooth and well incorporated.
Lay a large piece of plastic wrap on a clean surface, and spoon the goat cheese mixture onto the center of the wrap. Using the wrap, shape the cheese mixture into a log by rolling it tightly, twisting the ends of the wrap to secure it.
Refrigerate the log for at least 30 minutes to firm up.
While the cheese log is chilling, prepare the cranberry walnut coating. In a shallow dish, combine the chopped cranberries and finely chopped walnuts, mixing well.
Once the cheese log is chilled, remove it from the plastic wrap and roll it in the cranberry walnut mixture, pressing gently to ensure it adheres evenly around the log.
Place the coated log on a serving platter and allow it to sit at room temperature for about 10 minutes before serving to enhance the flavors.
