Instructions
In a large mixing bowl, combine rolled oats, almond butter, and honey (or maple syrup). Mix well until a sticky dough forms.
Add in the chopped dried cranberries, chopped almonds, chia seeds, vanilla extract, and a pinch of salt. Stir until all ingredients are well combined.
If the mixture is too sticky, let it sit for a few minutes to thicken or add more oats as needed.
Using your hands, roll the mixture into small bite-sized balls, about 1 inch in diameter.
Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
Once set, transfer the energy bites to an airtight container and store in the refrigerator for up to one week.
Notes
Serve the energy bites in a small jar or on a decorative plate, and sprinkle a few whole almonds and cranberries around for color.
