In a medium bowl, whisk together olive oil, fresh lime juice, lime zest, honey, chili powder, smoked paprika, minced garlic, salt, and pepper to create the marinade.
Add the shrimp to the bowl and toss gently to coat them well in the marinade. Cover and let it marinate in the refrigerator for at least 20 minutes (up to 1 hour for more flavor).
Preheat your grill or grill pan over medium-high heat.
Thread the marinated shrimp onto the skewers. Leave a little space between each shrimp for even cooking.
Place the skewers on the grill. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
