Instructions
Preheat your grill to medium-high heat.
Place the husked corn on the grill and cook for about 10-12 minutes, turning occasionally until the corn is charred and cooked through.
Once grilled, remove the corn from the grill and let it cool slightly.
In a large bowl, combine the diced red bell pepper, avocado, red onion, and chopped cilantro.
Cut the grilled corn kernels off the cob and add them to the bowl with the other vegetables.
In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
Pour the dressing over the salad ingredients and gently toss everything together until well combined.
Taste and adjust the seasoning if necessary.
If desired, top the salad with crumbled feta cheese before serving.
Notes
Optional to add crumbled feta cheese for extra flavor.
