turkey sausage, casings removed

onion, finely chopped

bell pepper (red or green), diced

celery, diced

Instructions
In a large skillet or dutch oven, heat the olive oil over medium heat.
Add the chopped onion, bell pepper, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the turkey sausage to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
Once the sausage is browned, stir in the rice, Cajun seasoning, dried thyme, and cayenne pepper. Cook for 2-3 minutes to toast the rice slightly.
Pour in the chicken broth, season with salt and pepper, and bring to a boil.
Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed all the liquid.
Fluff the rice with a fork and let it rest, covered, for an additional 5 minutes.
Serve warm, garnished with chopped green onions and fresh parsley.
Notes
Adjust cayenne pepper to taste for desired spiciness.
