1 lb flank steak

2 tablespoons balsamic vinegar

2 tablespoons olive oil

Salt and pepper to taste

2 cups mixed salad greens (arugula, spinach, and romaine)

1/2 cup Gorgonzola cheese, crumbled

2 ears of fresh corn, husked

1 red bell pepper, diced

1/4 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

Fresh basil leaves for garnish

Instructions
 

Marinate the Steak: In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper. Place the flank steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

    Grill the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill and cook for about 10-12 minutes, turning occasionally until the kernels are tender and slightly charred. Remove from the grill and let cool.

      Cook the Steak: After marinating, take the flank steak out and grill it over medium-high heat for about 4-5 minutes per side or until it reaches your desired doneness (medium-rare is about 130°F/54°C). Remove from the grill and let it rest for 5 minutes before slicing against the grain.

        Slice the Corn: Once the grilled corn has cooled, use a sharp knife to carefully slice the kernels off the cob into a bowl.

          Assemble the Salad: In a large serving bowl, combine the mixed salad greens, grilled corn kernels, diced red bell pepper, halved cherry tomatoes, and thinly sliced red onion. Toss gently to mix the ingredients.

            Slice and Add Steak: Slice the grilled flank steak into thin strips and arrange it on top of the salad mixture. Sprinkle the crumbled Gorgonzola cheese over the top.

              Garnish & Serve: Finish the salad with fresh basil leaves as a garnish and drizzle any remaining balsamic marinade over the top for added flavor. Serve immediately.
