Instructions
In a large mixing bowl, combine the rolled oats and almond butter until well blended.
Add honey (or maple syrup), shredded coconut, vanilla extract, and a pinch of salt to the mix. Stir until everything is fully incorporated.
Carefully fold in the dark chocolate chips and chopped almonds, ensuring they are evenly distributed throughout the mixture.
Let the mixture sit for about 10 minutes; this helps it hold together when forming the bites.
Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter.
Once all the mixture is rolled, place the energy bites on a parchment-lined baking sheet or plate.
Refrigerate for at least 30 minutes to firm up.
Store the energy bites in an airtight container in the refrigerator for up to a week (if they last that long!).
