In a large bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, sesame oil, rice vinegar, black pepper, and red pepper flakes until well combined.
Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
Preheat your air fryer to 375°F (190°C).
Remove the chicken thighs from the marinade, allowing excess marinade to drip off, and place them skin-side up in the air fryer basket. Reserve the marinade for later.
Air fry the chicken thighs at 375°F for 25-30 minutes, or until the skin is crispy and golden, and the internal temperature reaches 165°F (75°C). Flip halfway through cooking for even crispiness.
While the chicken is cooking, pour the reserved marinade into a small saucepan and bring it to a boil on the stove. Allow it to simmer for a few minutes until slightly thickened.
Once the chicken is done, carefully remove it from the air fryer and let it rest for a few minutes. Drizzle the thickened marinade over the chicken thighs before serving.
Garnish with fresh cilantro and serve warm.
Notes
Serve with steamed rice or stir-fried vegetables for a complete meal.
